Friday Favorites: Eat

Let me tell you guys something: these past few weeks have changed me. I’m a completely different person. I don’t even know who I am anymore. It all happened when I got bit. (You’re thinking I’m going to turn this into a vampire joke but I’m not. #Cullenprobs) Bit by the cooking bug, that is. (This intro is so corny, I totally feel like Phil from Modern Family.) It’s true though, I have been a cooking ninja the last two weeks, it’s almost scared me.

Christian and I had so much fun eating and drinking (for a party of five) over the 4th of July weekend that I think we both individually decided NO MORE, although clearly I still indulge every now and then. It’s a good thing we both wanted this health kick though because there is nothing worse than when only one of you wants to eat healthy and the other has to starve to death because “there’s nothing to eat in this house!”I think one of the biggest “tricks” to eating healthy is to have as much of the healthy food prepped and ready to eat as you can, because you know when 5p rolls around and I’m starving, if there’s nothing ready I’m goin’ straight for the bag of chips. (The other “trick” to eating healthy is to get rid of said bag of chips. Dang it.) The first thing I’ve been doing after a grocery run is cleaning and prepping all the food: washing grapes and taking them off the stems, cleaning and cutting up all of the veggies that are to be snacked on. This way, it’s all ready.

Things can get interesting when one of you (hi, me) has been a Pescatarian for 15+ years and the other (hi, not me) has decided to dip their toes into the vegan pool. (I’m sorry, I will never be able to give up cheese so he’s on his own with this one but I’m proud of his dedication to something he wants to do!) Fortunately, Pinterest is the most amazing resource for not only vegetarian recipes, but vegan recipes as well.

So, with all of that being said, I thought I’d share some of the recipes I tried over the past few weeks (& loved):

 Roasted Chickpea Ratatouille: This was probably the easiest thing to make ever and SO tasty. I also marinated tofu and throw it in there before serving.
 Mediterranean Orzo Pasta Salad: OBSESSED. I will definitely be making this a few more times this summer.
 Beet and Goat Cheese Hummus: Dare I say- the BEST hummus I’ve ever had? Wow, this was amazing and was the perfect snack. (And so pretty, too!)
 Homemade Pita Chips: (to eat with the hummus, right?!) This time I added sea salt and parmesan cheese for one bag and then pepper and lime toppings for the other bag. Both were delish!
 5 Ingredient Banana + Peanut Butter Muffins: I love breakfast foods, and unfortunately I love the breakfast foods that aren’t exactly healthy for you… like donuts and muffins and anything pastry. When I came across this healthier alternative I knew I had to try it – so glad I did because these were so good. Definitely not as sweet as what you might be used to but that’s kind of the point, isn’t it? Training your taste buds to not always go for the sweet & packed full of sugar treats!

 Baked Banana Chips. Oh yeah. These were obviously good. Did anyone else grow up eating banana chips?! I also made Apple Chips- both make for a crunchy, healthy afternoon snack!

  • Prepping ahead does make a huge difference. I do the same thing that way I’m ready to pack lunches, grab a snack and I don’t have to wash, cut, etc. at the last minute. You have some really good recipes here.

    • A friend of mine suggested I do that, clean everything right when I get home, and ever since I started doing it I’ve found we’ve eaten more of the food vs it going bad in the fridge!

  • How fun! I love to cook, too. Someday, we will cook together. In the meantime, let me just say that it is DEFINITELY super helpful when both people living in a house are trying to eat healthy. It drives me crazy when I’m trying to diet and my husband (who never gains a pound) eats an entire carton of ice cream in front of me.

    • hahaha I know!!! It really has made it easier, although Christian isn’t eating cheese so I feel like it’s my duty now to eat all of the cheese we have in the fridge 😉

    • I’ve made it twice already – once for us and another for a party and got lots of compliments at the party! I’m telling you- it’s so good! (Hey now- do not trash the donuts!!! Love!) 😉

  • I have some great vegan recipes if you are interested. One is a lentil taco, and a few soups from Oh She Glows. They are great, and you don’t really miss the cheese that much. We are also on a healthy eating routine…we just started, so who knows how long it will last. I will say that prepping everything ahead of time is key!

    • haha! So glad you liked that – had to slip it in there 😉 I hope you’re able to try more recipes now, friend! One of my friends could only eat macaroni & cheese for the first 6 months when she was pregnant. Afterwards she never wanted it again, ha!

  • 1 – beet & goat cheese is just like the BEST combo! 2 – SO chuffed to see the muffins are naturally gluten free – definitely will try those out! The ratatouille looks awesome too – if M ate more veggies I’d totally have that on my rotation. (To do: convince M that he likes more veg!!) Well done you for trying some pretty awesome cooking!!
